Olive Oil Chocolate Chip Cookies

Sometimes, a treat is in order, and these cookies are definitely a treat. They are rich, chewy, and delicious.
Perfect alongside a cold glass of milk, or to bribe two 4-year old boys into taking a nap. But maybe that's just what I use them for...

1/2 cup olive oil
1/2 cup brown sugar
1/4 cup raw sugar
1 teaspoons vanilla extract
1/2 teaspoon baking soda
1 egg
1 tablespoons cornstarch
1 1/4 cups flour
1/2 cup chocolate chips

Preheat oven to 350ºF
Cream the oil and sugar
Add the vanilla, baking soda, eggs,and cornstarch
Add flour and beat until just combined.
Fold in the chocolate chip
Rol1 the dough into balls. They should be about 1 1/2 inches across.
Bake for 8 to 9 minutes
