Everything But The Kitchen Sink Cookies

I like to have some sort of healthy treat on hand at all times, for the kids and the adults in the house. It keeps all of us from grabbing unhealthy or sugary snacks or candy when that snack bug bites. These cookies are perfect for that.
They are lightly sweet, full of wholesome oats, chewy dried fruit and molasses, and with a bit of a crunch from the sunflower seeds. Even my husband liked them (not a sweets person at all), and
when he asked what was in them, my reply was "I don't know, a little bit of everything." The boys liked them so much, I kept finding their big Melissa & Doug Deluxe Blocks stacked in the kitchen like little stairs leading right to the cookie jar. {affiliate link}  


1 cup whole wheat flour
1 1/3 cup whole oats
3/4 cups unsweetened shredded coconut
1/4 cup milk
1/2 tsp salt
1 tsp cinnamon
1/2 tsp powdered ginger
2/3 cups dried fruit (Raisins, blueberries, cranberries)
1/3 cup sunflower seeds
1/4 cups coconut oil
1/4 cup molasses
1/4 cup honey
2 eggs

Preheat oven to 350
Stir together all of the dry ingredients
Beat the eggs in a small bowl, add the remaining wet ingredients to the eggs
Pour the wet ingredients into the dry, and mix well
Drop the mix onto a cookie sheet, and bake for 10-12 minutes

Makes ~18 small cookies
