Whole Wheat Oatmeal Berry Pancakes

Oh how I love Saturday mornings! I get up early just so I can watch each boy come downstairs with sleepy eyes and tousled hair. The baby is always first, followed by Landon, and finally Preston.
This morning, Ayrton, Landon, and I started breakfast before the rest of the house woke up, so Landon got to pick the menu.
His choice?
Berry pancakes! With both strawberries because they are his favorite, and blueberry because those are Preston's favorite. I love his thoughtful heart and how he always thinks of what his brother would like. 
I also love that these pancakes are whole wheat, and are sweetened only with honey, but taste as good as anything you could order at the local breakfast joint. We served them up with 100% maple syrup, scrambled eggs, and free range turkey sausage from Shelton's.

1 1/2 cups whole oats
1/2 cup whole wheat flour
1 Tbsp baking powder
1 tsp salt
1 egg, beaten
1 Tbsp olive oil
1 Tbsp honey
1 1/2 cups milk
1 cup of berries (we used sliced strawberries and blueberries)

Put the oats in the blender, and pulse until they are about half flour, and half oats (see picture below)
Stir the dry ingredients together in a large mixing bowl
Add the remaining ingredients and mix until well blended
Fry on a hot oiled griddle, turning when the edges begin to firm
