Peanut Butter Cookies

I spent a lot of time in the kitchen this weekend testing recipes, but mostly ended up with quite a few *almost there* items that need a bit of tweaking before I would be comfortable sharing them. This is the only recipe that made the cut this weekend.

These cookies are banana based, vegan, gluten free (As long as your oats and baking powder are GF), and have no refined sugars.

Ingredients
2 medium bananas mashed
1/3 cup peanut butter
2 Tbsp maple syrup
1 tsp vanilla
1 cup of oats, blended until a fine flour
1 tsp baking powder
1/3 cup whole oats

Directions
Heat oven to 350
In a shallow bowl, mash the banana. Them mix in the peanut butter, maple syrup, and vanilla until well blended.
Put 1 cup of oats and the 1 tsp baking powder in the blender, and blend until it becomes a flour.
Mix the flour mixture into the banana mixture. Add in the whole oats, and mix.
Roll into 1-inch balls, and place on a baking sheet. Using the back of a fork, flatten cookies (wet the back of the fork between each cookie because the dough is very sticky)
Bake for 12 minutes
Makes 20 cookies

So many of my go-to recipes start this way :o)
