Oatmeal Chicken Bites

Chicken nuggets are a total kid food. They are on nearly every restaurant's kiddie menu, usually paired with french fries. And while chicken itself is a great protein source for kids, breading and deep frying it makes it turn from a clean, healthy food to a high fat, high sodium, junk food.

Here's a little breakdown:
Those 4-piece chicken nuggets (from you know where) have 190 calories, 12g of fat, and 360mg of sodium.
In comparison, this homemade recipe made 6 kiddie servings, each with 75 calories, 5.5g of fat, and 55.6mg of sodium.

Homemade vs. Fast Food Cicken Nuggets

 This recipe is great because it is not fried, and uses oatmeal instead of white flour. The 1-pound of chicken made enough for my 3 boys to have them for dinner, for lunch the next day, plus about 1 cup that I froze to test their ability to reheat. They freeze well, and reheat in 20 seconds in the microwave. Next time I will double the recipe and keep some in the freezer for a quick lunch addition.

3/4 Cup Whole Oats
1/4 tsp Paprika
1/4 tsp Garlic Powder
1/2 tsp Italian Seasoning
1/8 tsp Salt
1/2 Chicken Breast, cut onto 1-inch cubes (I butterfly the breast, then cube it to make them cook faster)
2 Tbsp + 1 tsp Coconut Oil
Oatmeal Chicken Bites

Preheat the oven to 350
Brush a baking sheet with 1 tsp coconut oil
Place the oats, paprika, garlic, Italian seasoning and salt into a blender or food processor and blend until it becomes a fine powder. (I use the Bella Rocket Blender)
Place the chicken into a bowl and toss with the 2 Tbsp of coconut oil.
Individually roll the chicken in the flower mixture, and place them onto the baking sheet.
Bake for 4 minutes on one side, turn, and bake for an additional 3 minutes.
