Farro & Zucchini Meat{less} Meatballs

 Although fairly new to the mainstream American supermarket, Farro is an ancient grain that has been around for quite a while. Italians have been cooking with it for over 2,000 years!

So why has Farro been making a name for itself recently? 

It's super good for you, that's why! 
















Fiber Fix
A cup of Farro has about 8 grams of cholesterol-lowering fiber. That's four times as much as white rich; brown rice weighs in at around 5 grams.
Chill Pill
Whole grains like faro are full of minerals, including magnesium, which may relieve tension.
Smart Carb
Farro's complex carbs break down slowly, keeping your energy level stable. The grain also has cyanogenic glucosides, a type of carb that may boost the immune system.
Protein Up! 
The Farro I bought at Trader Joe's has 10g of protein for 1/2 cup (the bag has 3 servings), and it only cost $1.79! That makes it an inexpensive, plant based protein source {Perfect for Meatless Monday}!

For this recipe, I paired cooked Farro with shredded zucchini and subbed it out for meat in my normal meatball recipe. It made 16 meat{less}balls that will be the boys main course for their lunches this week. They are meatless, but protein packed, and have sneaky veggies in them! Perfect!

Ingredients:
1 cup farro
1 clove garlic, crushed and diced
1 tsp Italian seasoning
1/4 cup Parmesan cheese
2 cups breadcrumbs {make your own at home! Just blend up dried bread, or all those leftover loaf heels} 
2 eggs   
1 cup shredded zucchini {to really hide them, peel the zucchini. I did not, but my boys didn't mind}

Directions:   
Preheat the oven to 350
Bring a pot of water to a boil, and 1 cup of Farro.
Let boil for 10 minutes, and drain.
In a large bowl, mix the Farro with all of the remaining ingredients until combined
Roll into 1 1/2 inch balls and line up in an 8x8 baking dish (They will be really gooey to work with, but should keep their shape)
Place in the oven and let bake for 25 minutes.

These would be really good with pasta for dinner, or even in a meatball sandwich!
