Creamy Spinach Pasta

This is one of our favorite pasta dishes. I have been making it so long, I don't remember where the recipe came from. I know it by heart, and it is my go to when I have no idea what to make for dinner. We always have pasta, and usually have at least frozen spinach on hand, if not fresh.

 This recipe is great because the kiddos get a creamy pasta dish that doesn't call for heavy cream or loads of butter like an Alfredo sauce. If your kids are resistant to the spinach, try chopping it extremely fine, or even blending it before adding it to the sauce. You will end up with a green sauce, but they won't be able to pick out the spinach, and they won't know the difference taste wise. Just call it Incredible Hulk pasta! (Or maybe Tinkerbell for the girl mamas)

2 Tbsp Butter or Olive Oil
1/2 Onion, Diced
2 Clove Garlic, Crushed
4 Tbsp Whole Wheat Flour
2 Cups Milk
1/2 Cup Parmesan Cheese
2 Cups Spinach, Chopped (fresh or frozen)
1 Package of Whole Wheat Penne or Bow Tie Pasta
Salt & White Pepper to Taste

In a large pot, start water to boil for cooking pasta.  Once boiling, add pasta.

Heat the olive oil in a large skillet. Once warm, add the onion and garlic, and cook until the onion is translucent and the garlic is fragrant. (About 5 minutes)
Add flour to the onion mixture and mix well, coating the onion. Add the milk slowly, using a whisk to stir constantly and remove any lumps. Stir in the Parmesan Cheese.
Bring the mixture to a boil, and then lower to a simmer.

Add in the chopped spinach, and season with salt and pepper to taste.

When pasta finishes cooking, drain well. Return to pot, and toss the pasta with the cream sauce.

Serves 8
