Best Ever Sweet Potato Fries

I always said my kids weren't going to eat French fries.

Before I had kids.

Edi & I still laugh at that one.

It was bound to happen at some point, but I remember the first time though.

They were 1  1/2, and we were on the beach in Huntington with my in-laws who were visiting from Europe. I brought food for the boys, but we were being touristy and ordered Burgers and fries at Dwight's to eat right there on the sand.

And when the boys reached for a fry, I didn't take it away.

It was a while before they had fries again. And even now, it's rare. But I figure that if I make sure that the majority of their meals are clean, healthy, and nutrient dense, I can relax over the occasional hot dog at a birthday party or french fry on the beach.

It's all about balance right?

The boys still eat fries, but most of the time they are these homemade sweet potato fries. These are so good, they are almost a treat. They are baked in coconut oil and cinnamon... Are you sold? I am!

I make these using a Mandoline Slicer I picked up at the thrift store, {Incredible kitchen tool... I can't believe I went so long without one!} but you could just as easily peel and cut the potatoes by hand.   

Sweet Potato French Fries

3 medium sweet potatoes {I used 2 orange and 1 white. Purple works too}
1 Tbsp Coconut Oil
1 tsp Cinnamon

Preheat the oven to 400
Peel the sweet potatoes and cut to fry length. {I cut mine once in the middle, and again down the center}
Slice them using the fry attachment on the mandolin
Toss the fries in the coconut oil, and spread out onto a baking sheet
Sprinkle with cinnamon
Bake for 7 minutes, turn the potatoes over, then bake for an additional 5 minutes. ]
{If you hand cut these, bake for 10 on each side}
