Well, peach season is coming to a close over here, as the last 3 peaches were picked this morning. We used, froze, gave away, and preserved as much as we could, but today when we were down to the last 3, I was definitely sad.
So we closed out peach season with homemade peach ice cream! This ice cream is dairy free, and uses honey in lieu of sugar. Oh, and it is SO creamy you won't even miss the dairy or sugar!
Ingredients
2 cans of Coconut milk (full fat)
1/4 cup of raw honey
2 tsp vanilla
6 small peaches pitted and peeled
Blend all of the ingredients until smooth and creamy. Add to your ice cream maker's canister, and process according to your machine's instructions.
