Summer Blueberry Peach Cake

This cake just screams summer to me. It is light and fluffy, and has fresh peaches and blueberries baked right in. Plus it is quick and easy to throw together with just a few ingredients.

I may or may not have thrown this together while cleaning up dinner on Friday night, and served it with breakfast on Saturday morning.

Because who doesn't like cake for breakfast?  


1 stick unsalted butter
1/2 cup maple syrup
1/2 tsp vanilla
2 large eggs

1 cup whole wheat flour
1 tsp baking powder
1/2 tsp salt

2/3 cup blueberries
2 small peaches, diced


Preheat the oven to 350.
Grease & flour a 8-9 inch cake pan.
Beat together the butter, syrup, and vanilla. Add in the eggs and.
add in the flour, baking powder, and salt, them beat on low until well blended.
Sprinkle the tops of the cake with the blueberries & diced peaches
Bake for 60 minutes.
Cool and sprinkle powdered sugar on top
