Roasted Zucchini Pizza

There have been pictures floating around Pinterest for a while of these zucchini pizzas that look absolutely incredible. I pinned a picture to my board of side dishes for zucchini season, and called it today. But today when I found zucchini for an incredible price at the Farmer's Market, that picture immediately came to mind.
But when I opening the pin, it had no link attached! So I had to wing it, but recipe or not these came out incredible! 

3 Zucchini
1 Tbsp Olive Oil
Italian Seasoning
1 Cup Grated Cheese
(I used Colby Jack just because it is what was on hand)   
6 Cherry Tomatoes
Chopped Parsley

Preheat the over to 350

Wash the zucchini and cut of the ends. 
Slice each zucchini directly down the middle to create 2 boats out of each one. 

Brush each half with olive oil, and sprinkle with Italian seasoning

Divide the shredded cheese between the 6 zucchini boats, and top each one with a cherry tomato that has been sliced into thirds.
Sprinkle freshly chopped parsley on top, and place into the over for 20 minutes.

After 20 minutes of baking, turn the broiler on low and broil the zucchini for 5 minutes to get a crispy top
