No Bake Oatmeal Cookie Bites

Dates are something my toddlers just look at and say no to.
They say almonds are too 'strong' for them to eat. {too hard for their little teeth}
But both of these foods are really good for them. Dates are an excellent source of fiber and potassium, and almonds are rich in vitamin E and folate, as well as monounsaturated and polyunsaturated fats! So to get my boys to eat these two foods, I had to get a little creative.

These Raw Oatmeal Cookie bites are super easy, require no cooking, and have no oil, eggs, added sugar, dairy, or flour. But my boys think they are cookies just the same.

They really do taste like an oatmeal cookie, and are an easy to grab-and-go energy bite for busy parents as well!

Ingredients
6 Dates pitted
1/4 cup raw almonds
1/4 cup unsweetened coconut + 1 Tbsp
1/4 cup oats
3 shakes of cinnamon

Directions
Place all ingredients in a food processor (except for the extra 1 Tbsp of coconut) and pulse until everything is blended. When the contents form a ball in the container, it is done.

Remove from the food processor and roll between your hands into 12 balls.

Clean and dry the food processor and place the coconut in the canister. Pulse until you get a snowy looking powder.

Roll the balls in this coconut powder to coat.

Makes 12 one-inch cookie balls.
